Albacore Tuna Salad w/ Dill-Roasted Potatoes, Asparagus Garnish (for 2)

Jay originally wanted to call this Magnificent Tuna Salad but opted for a more descriptive title. This yummy salad is made with diced celery, dill-roasted potatoes, a little onion, mayo, lemon, roasted red peppers, herbal seasonings and garnished with asparagus. Serve as a salad or with between your favorite bread as a sandwich or melt.

Albacore tuna fish is often referred to as “white tuna” – it is a premium tuna with less fat, denser texture, and more flavor than ‘regular’ tuna fish.
