Autumn Alfredo w/ Linguini, Roasted Squash, Dab of Three Green Pesto (for 2)
First we make a killer alfredo sauce (with light cream, garlic, Parmesan, whisked-in egg yolks, parsley). Then we saute bell peppers, kale, and roasted butternut squash, fold in cooked linguini , and blend in the alfredo sauce – all while being ultra careful not to break the sauce. A dab of Jay’s Three Green Pesto is spooned over the top at the finish. #inthemoodforpasta #vegetarian
