Barefoot Contessa’s Cauliflower and Vegetable Gratin (for 2+)


Inspired by culinary goddess Ina Garten’s Cauliflower Gratin recipe, Jay doubles down on the vegetables and adds butternut squash, broccoli, and spinach (along with cauliflower). The veggies are combined with a ‘gratin’ sauce made with milk, Muenster cheese, Parmesan, nutmeg, and thickened with a roux (butter-and-flour mixture), topped with Panko breadcrumbs and parsley, and baked together for a terrific finish.
