Jay’s popular Blackened Catfish is lightly seasoned with a piquant (but not overpowering) blend of white pepper, black pepper, cayenne, onion powder, garlic powder, and paprika. The fillets are flavored with lemon and melted butter, then blast roasted and served with Creole Rice and Red Beans (made with onion, bell peppers, celery) and accompanied with Brown Butter-and-Lime Glazed Olathe-grown Corn-on-the-Cob.
