Breakfast Bowl II: Eggs Over Easy, Tri-Colored Potatoes, Kale, Peppers, Cheddar (for 2)
First we roast baby tricolored potatoes, bell peppers, and kale and scoop into bowls. Then we fire up the skillet, add a little oil, crack the eggs into the pan and gently cook before breaking the yolk and flipping, cooking briefly on the other side before sliding over the roasted potatoes and sprinkling Cheddar cheese at the finish. #WOWZA #glutenfree #vegetarian #breakfastdoneright
