Breakfast Enchilada with Herb Roasted Potatoes, Veggies (for 2)


First, we whisk eggs and cook over a well-calibrated flame, quickly stirring until fluffy.  Then, flour tortillas are filled with scrambled eggs, jack-cheddar cheese, herb roasted potatoes and red peppers, and caramelized onions.
