Cajun Butter Prawns with Blue Corn Grits, Sweet Potato Succotash (for 1)


Shrimp ‘n Grits is a Southern classic. We tweaked the recipe by sauteing prawns (jumbo shrimp) without bacon but with Cajun-spiced butter, lemon zest, and garlic, then serving with Sweet Potato Succotash (made with roasted sweet potatoes, shallots, corn, and bell peppers) over slow-cooked Blue Corn Grits (made with Colorado-milled cornmeal, purified water, milk, butter, Monterey Jack and Parm cheeses).  #BigEasyYum!
