Cajun Chicken and Sausage ‘Pastalaya’ with Linguini and Mozzarella (for 1)


Cajun Pastalaya is like “jambalaya”, but with pasta instead of rice. Jay’s version calls for Creole sauce made with onions, bell peppers, and celery – along with garlic, crushed tomatoes, thyme, parsley, paprika, black and white pepper, and a smidge of cayenne.  We add chicken breasts (diced and shredded) and smoked sausage, let the sauce simmer, and toss with linguini. Topped with mozzarella, Parmesan, and parsley. BAM! #PastaWithAttitude
