Jay’s Champagne Chicken with Wild Rice Pilaf and Herb Roasted Carrots features skillet-seared chicken breasts (lightly dredged with flour) and simmered in a Champagne-Mushroom Sauce made with cremini mushrooms, garlic, shallots, Champagne, organic chicken broth, crushed tomatoes, light cream, fresh parsley, and thyme. Served with wild rice pilaf (onion, celery) and herb-roasted carrots as a garnish.
