For Jay’s Papaya Grilled Steak Bowl, flank steak is marinated in a blend of mashed papayas, gluten-free soy sauce, lime juice, Worcestershire sauce, canola oil, cane sugar, parsley, garlic, cumin, and chili powder, then char-grilled and served over brown rice and red beans with caramelized onions, peppers, and topped with Fontina cheese. Rustic tomato salsa (made with mild Hatch green chilies) on the side. **Papayas are natural meat tenderizers.**
