Chicken Enchiladas w/ Sweet Potatoes, Corn, Brown Rice, Cheddar (for 2)

Jay’s hearty dinner enchiladas feature two large flour tortillas stuffed with brown rice along with diced lean chicken breast, roasted sweet potatoes, kale, zucchini, corn, shredded Cheddar-Jack cheese, all seasoned with cumin, with red enchilada sauce spooned over the top. Garnished with green onion.
