Chicken Spiedie Bowl, Orzo Pilaf, Peppers and Onions, Feta (for 1)


Jay’s Chicken Spiedie Bowl is a twist on the classic upstate New York sandwich roll. The key ingredient is an Italian dressing-like marinade; before grilling, boneless chicken are brined in an aromatic mash of lemon juice, wine vinegar, canola oil, garlic, and assorted herbs (oregano, basil, mint, thyme, parsley), kosher salt, and brown sugar. The char-grilled chicken is served over Orzo Pilaf (made with toasted orzo and rice, onion, celery, and turmeric) and garnished with roasted peppers, onions, and feta.  #SummerTraditionsAreTheBest

*Invented in Binghamton, NY,  ‘spiedie’ (SPEE-dee) comes from the Italian word ‘spiedo’ and refers to any meat grilled on a spit or skewer.  Spiedies are typically served on hoagie rolls, but some traditions are meant to be tweaked 🙂
