Coconut Lime Tofu, Sesame-Peanut Noodles, Seared Veggies (for 1)


For Coconut-Lime Tofu, we marinate tofu with coconut, lime juice, gluten-free soy sauce, brown sugar, and sesame oil.  The tofu is roasted, then served over Sesame-Peanut Noodles (made with peanut butter, gluten-free soy sauce, sesame oil, ginger, garlic, lime juice, cumin, coriander, and rice noodles.) The perfect marriage of sweet, nutty, and savory! Garnished with seasonal vegetables (broccoli, green beans, green onions) and sesame seeds.
