Jay’s CowGirl Chili starts with lots of vegetables: sauteed celery, onions, zucchini, carrots, bell peppers, and garlic, then we add lean Angus ground beef, crushed and stewed tomatoes, white and red beans, light chili powder, cumin, paprika, and parsley. Slow-cooked, not too spicy; just right! This delicious ‘bowl of red’ comes with shredded Tillamook cheddar on the side.
