Eight Vegetable Jambalaya, Red Beans and Rice, Sharp Cheddar Cheese (for 1)


For Jay’s Eight Vegetable Jambalaya, we prepare a piquant Creole sauce with bell peppers, celery, onions, carrots, garlic, crushed tomatoes, and Cajun seasonings, and after a slow-simmer, we add roasted eggplant, zucchini, and mushrooms, and simmer some more.  The Creole veggies are served over chewy brown rice and red beans and topped with cheddar cheese at the finish. #VegetarianAwesomeness
