Curried Chicken and Vegetable “Roti” with Chick Peas, Mint-Cucumber Raita (for 1)
Roti is a popular Caribbean hand-held meal with curried meats and veggies folded tightly into a ‘wrap’. Jay’s hearty filling is made with shredded chicken, carrots, onions, celery, tomatoes, chickpeas, potatoes, green peas, garlic, cumin, curry powder, and turmeric. We serve the curried filling with two mini flour tortillas and a side of Mint-Cucumber (yogurt) Raita. To make the roti, scoop the chicken ‘dal’ into the tortillas, top with a dollop of raita, and pass the napkins!
