Curried Vegetable “Roti” with Chick Peas and Cucumber Raita (for 1)


Roti is a popular Caribbean hand-held meal with curried vegetables (or meats) folded tightly into a ‘wrap’. Jay’s hearty vegetarian filling is made with cauliflower, carrots, onions, celery, tomatoes, chickpeas, potatoes, green peas, garlic, cumin, curry powder, and turmeric. We serve the curried filling with two soft mini-tortillas and a side of cucumber-yogurt raita. To make the roti, scoop the dal into the tortillas, top with a dollop of raita, and pass the napkins!
