DEUCE: Jay’s Jamaican Jerk Chicken, Plantains, Butternut Squash, Yellow Rice and Red Beans (for 2)


Jay’s Jamaican Jerk Chicken starts by marinating boneless chicken breasts in a fragrant mash of gluten-free soy sauce, wine vinegar, canola oil, green onions, thyme, parsley, brown sugar, cloves, cinnamon, black pepper, cloves, and nutmeg. The chicken is basted and grilled and served over Yellow Rice and Red Beans with Sweet Plantains and Roasted Butternut Squash. While jerk chicken tends to be spicy, we’re featuring a milder version. DEUCE, serves 2.

Why Jerk Chicken on Valentine’s Day? Thirty-two years ago Jay took a trip to the Caribbean with his best friend, Emily Robin. They came back to the States as a “couple,” and have been happily married ever since.
