DEUCE: Madhur Jaffrey’s Chicken Tikka Masala with Eggplant, Chick-Peas, and Jasmine Rice (for 2)


Madhur Jaffrey’s Chicken Tikka Masala is a British adaptation of the classic Indian dish. Boneless chicken is marinated in yogurt, lemon juice, ginger, garlic, cumin, paprika, curry powder, and garam masala.  Separately, the masala (curry ‘gravy’) is made with ghee, onions, ginger, garlic, turmeric, cumin, coriander, chili powder, light cream, carrots, roasted eggplant, chick-peas, a few potatoes, and pulpy tomatoes. (Light cream is stirred in near the finish.)  The chicken tikkas are grilled, cubed, and combined with the yummy masala. Served with jasmine rice and garnished with roasted cauliflower or broccoli. Serves 2.
