DEUCE: Madhur Jaffrey’s Chicken Tikka Masala with Eggplant, Chick-Peas, Spinach, and Basmati Rice (for 2+)

Madhur Jaffrey’s Chicken Tikka Masala is a British adaptation of the classic Indian dish. Boneless chicken is marinated in yogurt, lemon juice, ginger, garlic, cumin, paprika, curry powder, turmeric, and coriander.  Separately, the masala (curry ‘gravy’) is made with butter/ghee, onions, ginger, garlic, turmeric, cumin, coriander, chili powder, carrots, eggplant, chick-peas, spinach, and crushed tomatoes. (Light cream is stirred in near the finish.)  The chicken tikkas are grilled, cubed, and combined with aromatic masala/gravy. Served with basmati rice. #AFlurryofCurry!  DEUCE, serves 2+.
