DEUCE: Pasta alla Zozzona with Italian Sausage, Angus Beef, Mozzarella-Provolone (for 2)
Jay’s Pasta alla Zozzona features a hearty red sauce made with sweet Italian sausage, Angus ground beef, caramelized onions, bell peppers, carrots, eggplant, and celery, simmered with reduced red wine, milk, and San Marzano plum tomatoes, garlic, parsley, thyme, and basil. The zozzona gets tossed with penne and at the finish we add shredded mozzarella and provolone. DEUCE, serves 2.
*Zozzona roughly translates to “a big mess” or “everything but the kitchen sink.”
