Roasted Eggplant and Wild Mushroom Lasagna (for 2)


Roasted eggplant, cremini mushrooms, zucchini, a house-made marinara sauce from a chef who’s grandparents were Italian immigrants, and everything is held together with a ricotta cheese filling made with mozzarella and Parmesan – what’s not to like? We took out the pasta but added a whole lotta vegetables and flavor. #CasseroleSupremo #MondoMeatless
