Jay’s Deconstructed Frittata goes like this: fire up the skillet, whisk and briskly scramble real eggs seasoned with fresh and dried herbs, then slide eggs into a bowl. Next, layer a beautiful pile of Jay’s Vegetable Hash ( roasted potatoes, caramelized onions, bell peppers, and zucchini).  Sprinkled with crumbled Feta cheese over the top. Perfect for light dinner or mid-week brunch!
