Gado-Gado Tofu and Veggies w/ Indonesian Peanut Sauce, Jasmine Rice (for 2)


We roast a plethora of vegetables (bell peppers, zucchini, onion, summer greens, broccoli), then blend with roasted tofu and cover with Indonesian gado gado peanut sauce (made with coconut milk, lime juice, ginger, garlic, peanut butter, gluten-free soy sauce, cumin, coriander, and sriracha) and serve over fragrant jasmine rice.
