Jay’s Fig and Olive Chicken features boneless chicken marinated in a blend of green and black olives, dried plums, figs, wine vinegar, olive oil, parsley, oregano, and garlic, then roasted with white wine and brown sugar. The robustly flavored chicken is served with sweet-n-tart Port Wine-Pear Chutney (made with port-poached pears, apples, craisins, garlic, wine vinegar, onion, and brown sugar) along with Wild Rice Pilaf. Garnished with market veggies and a sprinkling of goat cheese.
