Greek Moussaka! w/ Angus Beef, Plum-Tomato Sauce, Double Eggplant, Zucchini, Bechamel (for 1)


Every Greek restaurant in a college town serves this comforting casserole dish. Moussaka is similar to lasagna (minus the pasta) with a Bolognese-like tomato sauce made with ground Angus beef, onions, carrots, garlic, red wine, crushed tomatoes, and cinnamon, layered with herb-roasted eggplant, topped with Bechamel (made with milk, butter, flour, egg yolks, Parmesan, Jack cheese, and nutmeg).  Jay’s low-carb version features an eggplant-zucchini crust.
