Mayan Grilled Chicken, Red Quinoa-Sofrito Rice, Roasted Sweet Potatoes, Cheddar (for 1)


Jay’s Mayan Grilled Chicken Bowl starts by marinating boneless chicken in lemon and lime juice, cilantro, parsley thyme, canola oil, brown sugar, garlic, cumin, egg, paprika, chili powder, Worcestershire sauce, and a touch of hot sauce.  then grilling over an open flame, and serving over a bowl of red quinoa and sofrito rice (made with onion, celery, bell peppers, zucchini, converted rice, chili powder) and garnishing with roasted sweet potatoes and Cheddar-Jack cheese.  Wholesome and delicious!
