Mayan Grilled Chicken, Sofrito Brown Rice, Roasted Sweet Potatoes, Black Beans, Cheddar (for 1)


Jay’s Mayan Grilled Chicken Bowl starts by marinating boneless chicken in lime juice and orange juice, cilantro, parsley, thyme, canola oil, brown sugar, garlic, cumin, egg, paprika, chili powder, Worcestershire sauce, and a touch of hot sauce, then grilling over an open flame and serving the chicken over a bowl of sofrito brown rice (made with onion, celery, bell peppers, chili powder) and garnished with roasted sweet potatoes, black beans, and Cheddar-Jack cheese.  Wholesome and delicious!
