Jay’s Mayan Grilled Chicken Bowl starts by marinating boneless chicken in lime juice, cilantro, thyme, canola oil, mustard, brown sugar, garlic, cumin, egg, annatto paste, chili powder, Worcestershire sauce, and a touch of hot sauce, then grilling over an open flame, and serving over Poblano Rice and Beans (made with onion, celery, diced poblano peppers, jasmine rice, and pinto beans) and garnished with roasted sweet potatoes and Jack cheese.  Wholesome and delicious!
