Grilled Chicken Cacciatore with Mascarpone-Marinara and Penne (for 1)
Jay’s Herb-Grilled Chicken Cacciatore with Mascarpone-Marinara is a luscious twist on an Italian classic. First, we prepare a vegetable-laden red sauce made with San Marzano plum tomatoes, zucchini, onions, carrots, mushrooms, garlic, and fresh parsley and simmer it for hours. Next, boneless chicken breasts are lightly marinated in an herbal vinaigrette, grilled, sliced, and nestled into the marinara, then blended with mascarpone ricotta cheese (and egg for binding) then tossed with penne, and gently baked with melted Parmesan and mozzarella cheese on top.
