Skillet Chicken Marsala with Wild Rice Pilaf, Parmesan-Crusted Cauliflower (for 1)


Jay’s wintry Chicken Marsala features skillet-seared chicken breasts (lightly dredged with flour) and topped with velvety Marsala-Mushroom Sauce made with button mushrooms, garlic, shallots, spinach, reduced Marsala wine, Dijon mustard, organic chicken broth, light cream, fresh parsley, and thyme. Served with brown and wild rice pilaf (onion, celery) and Parmesan-crusted cauliflower. Serves 1.

Marsala sauce is thickened with a flour-based roux.
