Gumbo Ya-Ya with Chicken, Smoked Sausage, Brown and Red Rice (for 1)


Jay’s Gumbo Ya-Ya is inspired by legendary Chef Paul Prudhomme’s classic gumbo recipe. Our version starts with a mirepoix of celery, onions, peppers, and garlic, and then we add stewed tomatoes,  brown and red rice, red beans, organic chicken broth, and season the pot with black and white pepper, chili powder, parsley, thyme, a touch of cayenne, chicken (white and dark meat) and sliced smoked sausage.  The hearty pot simmers until just right. 

*Traditional Gumbo Ya-Ya is traditionally thickened with roux, but we’re making ours gluten-free and skipping that step.
