‘Indian Butter’ Cauliflower with Chick-Peas, Eggplant, Jasmine Rice (for 1)


Inspired by the popularity of ‘Indian Butter Chicken’, Jay’s vegetarian version starts with caramelized onions in butter then we add cauliflower, eggplant, carrots, and spinach and simmer in a tomato sauce with chickpeas, potatoes, cumin, coriander, turmeric, ginger, garlic, and cinnamon.  (Light cream is added near the finish.) Aromatic jasmine rice completes this inventive plant-based meal. Despite its name, this dish is not swimming in butter -the richly flavored tomato sauce is deeply (and yummily) seasoned with aromatic spices.
