Indian Butter Chicken with Cauliflower, Sona Masoori Rice, Raita (for 2)


For Jay’s version of this classic Indian dish, roasted boneless chicken (with roasted cauliflower and carrots) simmer in a rich tomato sauce seasoned with garam masala, cumin, turmeric, ginger, and cardamom. (We skip the light cream found in most recipes and use a little coconut milk). The sauce’s namesake refers to a base of buttery caramelized onions.  Sona masoori rice (medium grain with flavor profile between jasmine and basmati) and a cooling Cucumber Raita (a yogurt condiment) completes this amazing meal. #Chicken Makhani

Despite the name ‘Butter’ Chicken is not swimming in butter. More like a richly flavored tomato sauce deeply seasoned with aromatic and piquant spices.
