Jay’s Indian ‘Butter Chicken’ features yogurt-and-spice marinated chicken cooked with roasted cauliflower, eggplant, and carrots, then combined with caramelized onions and butter and slow- simmered with plum tomatoes and seasoned with garam masala, cumin, turmeric, curry, ginger, garlic, paprika, cayenne, a hint of cinnamon, and light cream. Aromatic basmati rice and cooling Cucumber Raita (a yogurt condiment) complete this intensely flavored meal.
