Indian Butter Chicken with Cauliflower, Eggplant, Basmati Rice, Cucumber Raita (for 1)


Soon after Instant Pot became the “it” appliance, recipes for Indian Butter Chicken blew up the internet. Jay’s version (prepared in a huge cauldron on the stovetop) includes boneless chicken cooked with roasted cauliflower, eggplant, and carrots, all simmered in a plum tomato sauce seasoned with garam masala, cumin, turmeric, ginger, garlic, paprika, cayenne, and a hint of cinnamon. (We replaced the light cream with coconut milk). Aromatic basmati rice and cooling Cucumber Raita (a yogurt condiment) complete this wonderfully flavored meal. Despite its name, Butter Chicken is not swimming in butter. The richly flavored tomato sauce is deeply (and yummily) seasoned with aromatic and piquant spices.   #AnotherViralSensationforDinner
