For Jay’s vegetarian version of Indian butter chicken (a classic dish), tofu cubes (with roasted cauliflower and carrots) simmer in a rich tomato sauce seasoned with onion, garam masala, cumin, turmeric, ginger, and cardamom (we skip the cream).  Served over brown rice with a cooling Raita (a cucumber-yogurt condiment) on the side to complete this awesome plant-centric meal.  #Tofu-Makhani

Despite the name ‘Butter’ Tofu, the dish is not swimming in butter. More like a richly flavored tomato sauce deeply seasoned with aromatic and piquant spices. (The sauce’s namesake refers to a base of buttery caramelized onions.)
