Jay’s Slow-Baked Ziti with Mondo Vegetarian Bolognese (for 1)


First, we create a legendary Vegetarian Bolognese by sauteing a plethora of finely chopped vegetables: onions, carrots, celery, zucchini, mushrooms, and minced garlic. The vegetable sofrito slowly cooks, then we add a bit of wine (reduced) followed by milk, reduce more, then cooked lentils (for texture and protein) and plenty of San Marzano plum tomatoes. The meatless bolognese cooks slowly and lowly before getting tossed with penne pasta, ricotta, mascarpone cheese, and mozzarella, and baked until bubbly on top. #NewVegetarianClassic
