Eight Vegetable Ziti with Ricotta, Mozzarella, and Marinara (for 1)


First, we create a vegetarian-loaded marinara with mushrooms, eggplant, onions, carrots, celery, zucchini,  tomatoes, spinach, and minced garlic. The vegetable sofrito slowly cooks, then we add a bit of wine (reduced) followed by milk, reduce more, then plenty of San Marzano plum tomatoes. The meatless red sauce cooks slowly before getting tossed with penne pasta, ricotta, mascarpone cheese, and mozzarella, and baked until bubbly. #NewVegetarianClassic
