Jay’s Bolognese-inspired Lamb Ragu with Pappardelle (Egg) Noodles features two sauces: first, a “pink” marinara with San Marzano plum tomatoes, onion, carrots, celery, garlic, basil, and oregano, simmered for hours, then blended with mascarpone, ricotta, and mozzarella cheese. Next, the lamb ragu is prepared by braising grass-fed ground lamb with garlic, onions, and carrots, slowly simmering with plum tomatoes, red wine, milk, parsley, thyme, and rosemary. Pappardelle noodles are tossed with the pink marinara and layered with luxurious lamb ragu. Lightly topped with feta cheese and fresh parsley. #Magnifico!
