Lasagna Bolognese with Polenta Crust, Spinach, Mascarpone-Ricotta Cheese, Angus Beef (for 1)
Jay’s reinterpretation of Lasagna Bolognese starts with a classic Bolognese – a deeply flavored meat sauce prepared with San Marzano tomatoes, Angus ground beef, onion, carrots, garlic, red wine, milk, celery, fresh basil (and fresh spinach), slow-cooked for hours (literally!) As the sauce cooks, a parallel pot of Polenta slowly simmers (cornmeal, Parmesan, water, a little butter). Next: the mascarpone and ricotta filling with mozzarella, and eggs (for binding). The lasagna is built one layer at a time: a thin polenta ‘crust’, then bolognese, flat noodles, more sauce, cheese filling, noodles, repeat, and top with sauce, parsley, and mozzarella. #Magnifico! #StackedHigh!
