Grilled Shrimp with Latin American Rice (Arroz con Mariscos) for 1


Seafood rice (Arroz con Mariscos) is a classic Latin/South American dish similar to Spanish paella. Prepared with fragrant jasmine rice cooked in a seafood broth and combined with sauteed onions, garlic, bell peppers, tomatoes, cilantro, cumin, fresh parsley, and achiote (or annatto) powder. We grill lightly marinated shrimp and layer over the rice at the finish.

Achiote is made from ground annatto seeds, a bright orange-red spice with a mild peppery aroma and subtle flavor. Achiote is used commercially to add color to butter, cheddar, and Muenster cheese.
