Mediterranean Chicken Pita with Chopped Greens, Feta, Hummus (for 1)
Jay’s Mediterranean Grilled Chicken Pita starts by steeping boneless chicken in lemon juice, canola and olive oil, garlic, oregano, thyme, parsley, kosher salt, Dijon, and brown sugar, then grilling over open flames. The chicken is chilled and served with chopped Romaine lettuce, arugula, feta, cucumbers, cherry tomatoes, and chick-pea hummus. Served with pita on the side.
