Mediterranean Grilled Chicken, Ratatouille-Salsa, Quinoa Pilaf, Feta Cheese (for 1)
For Jay’s Mediterranean Chicken with Warm Ratatouille Salsa and Goat Cheese, boneless chicken is marinated overnight in an herbal mash of lemon juice, olive oil, red wine vinegar, garlic, brown sugar, and oregano, thyme, rosemary, and parsley, then grilled over a roaring flame. The fragrant chicken is served with quinoa-brown rice pilaf (celery, onion) and Jay’s ‘Ratatouille Salsa’ (made with roasted eggplant, diced tomatoes, peppers, onions, garlic, lime, and cilantro). Crumbled feta cheese arrives on the side.
