Mediterranean Tofu Pita with Chopped Greens, Feta, Lentil Tabooley, Chick-Pea Hummus (for 1)
Jay’s Mediterranean Tofu Pita starts by marinating extra firm tofu in lemon juice, canola and olive oil, garlic, oregano, thyme, parsley, kosher salt, Dijon, and brown sugar, then blast roasting. The cubed tofu is then chilled and served with chopped Romaine lettuce, arugula, feta, cucumbers, cherry tomatoes, Lentil Tabooley, and chick-pea hummus. Served with pita on the side.
Hummus ingredients: chickpeas, tahini, lemon juice, garlic, cumin, olive oil. Lentil Tabooley is made with brown lentils cooked in a vegetable broth (carrots, onion, and celery) then tossed with parsley, lemon, and cucumbers.
