This recipe recreates the ‘halal-cart’ classic: boneless chicken (white and dark meat) are marinated with herbs, lemon, canola oil, and spices (coriander, garlic, cumin, oregano), grilled, cubed, and served with golden turmeric-scented rice, chopped lettuce, tomatoes, pita bread, and a tangy white sauce on the side. It’s a savory meal that can be enjoyed sitting on a park bench, at a desk on the umpteenth floor of a skyscraper, or in the comfort of your home.
