Jay’s Midnight Pasta Bolognese with Angus Beef and Shrimp Scampi starts with a slow-cooked, 4-hour Bolognese (made with Angus ground beef, San Marzano plum tomatoes, onion, carrots, celery, and garlic, simmered with reduced red wine and milk.) There’s always a story. Many years ago, every major holiday Jay visited his retired father in Las Vegas. Arriving around midnight on a cheap flight (always), they would head straight to the Stardust Casino (or the Sands)— not to gamble (ha!) but for the late-night steak, shrimp, and all-you-can-eat pasta buffets. Hence the homage to Midnight Pasta.
