Jay’s Midnight Pasta Bolognese with Angus Beef and Shrimp Scampi starts with a slow-cooked, 4-hour Bolognese (made with Angus ground beef, San Marzano plum tomatoes, onion, carrots, celery, and garlic, simmered with reduced red wine and milk.) Years ago, whenever Jay visited his retired father in Vegas, he’d arrive around midnight (on a cheap flight) and head straight to the Stardust (or the Sands) with his Dad— not to gamble (ha!) but for the late-night buffet of steak, shrimp, and all-you-can-eat pasta.
