Mission Burrito with Lime-Cilantro Grilled Chicken, Brown Rice, Rustic Salsa (for 1)
Decades ago, the original Mission Burrito appeared on menus in San Francisco’s Latino neighborhoods (and is widely considered the ‘godmother’ of fast-casual burritos.) Jay’s version calls for a large whole wheat tortilla (“wrap”) filled with brown rice pilaf, pinto beans, shredded jack and cheddar, corn, sweet potatoes, and lime-and-cilantro marinated grilled chicken. We’re serving it ‘dorado- style’: searing one side of the rolled burrito onto a griddle until golden brown. Served with rustic salsa on the side.
