For this light, plant-centric meal or side dish, we thickly slice a whole cauliflower and roast it along with large broccoli florets (and some broccoli stalks).  We then prepare an aromatic sweet potato dal (an Indian condiment made with well-cooked lentils, onion, garlic, turmeric, cumin, curry powder, sweet potatoes, and potatoes). Sprinkled with red quinoa at the finish. Serve the dal on the side or on top. #plantforward #zerofoodwaste
