Moroccan-Grilled Chicken w/ Preserved Lemons, Quinoa Pilaf, String Beans, Lemon-Tahini, Feta (for 1)
For Jay’s Morrocan Grilled Chicken with Preserved Lemons, boneless chicken are marinated overnight in an herbal mash of lemon juice, preserved lemons, olive oil, garlic, brown sugar, oregano, thyme, rosemary, and parsley, then grilled over a roaring flame. The fragrant chicken is served with quinoa-brown rice pilaf (celery, onion) and Jay’s versatile Lemon-Tahini dressing on the side with roasted string beans. Crumbled feta cheese goes over the top.
*Preserved lemons, common in Moroccan cooking, are pickled in brine and have a mildly tart but intensely lemon flavor. The lemon pulp is used in marinades, stews, and sauces, but it is the peel (zest and pith together) that is most prized!
