Mulligatawny with Chicken, Red Lentils, and Coconut (for 2)


Mulligatawny is a savory Anglo-Indian soup-meal with myriad versions; some contain rice, some coconut milk,  some are vegetarian while others include meat; nearly all call for apples. Jay’s version starts with sauteing onion, celery, carrots, and garlic, then simmering with organic chicken broth, sweet potatoes, curry powder, cumin, coriander, stewed tomatoes, red lentils, rice, and shredded chicken. Near the finish, diced apples and coconut milk are added in and simmered. The flavors run the gamut, from curry and cumin to subtle tones of fruit and aromatics of onion and ginger. #OnePotSoupMeal
