Mushroom ‘Stroganoff’ Soup-Meal with Wild Rice and Merlot (for 2)
Jay’s popular Mushroom Stroganoff Soup-Meal starts by sauteing a small mountain of sliced mushrooms with celery, onions, carrots, and garlic, then simmering in vegetable broth with wild rice, Merlot wine, crushed tomatoes, thyme, paprika, and parsley. Near the finish, we add wide egg noodles (pappardelle) and roasted wild mushrooms and simmer until the noodles are just right. A little light cream and dry sherry get stirred in before serving. Best enjoyed in a shallow bowl!
