Nana’s Chicken Cacciatore with Cavatappi Pasta (for 2 or 6)


Jay’s savory adaptation of his Sicilian Nana’s chicken cacciatore calls for medallions of boneless chicken (white and dark meat) simmered in a vegetable-laden sauce of San Marzano plum tomatoes, mushrooms, onions, zucchini, carrots, garlic, and fragrant basil and parsley. (The sauce slow-cooks for hours.) The sauce is ladled over and tossed with cavatappi pasta (curly, corkscrewed shaped noodles) and topped with Parmesan cheese and more parsley. #delicioso  Choose 2 servings or oven-ready dinner tray for about 6 servings.
