Pasta Al Forno with Angus Beef, Italian Sausage, and Spinach Bechamel (for 1)


Pasta al forno (“pasta to the oven”)  is made with short pasta (penne) covered with a rich tomato sauce, bechamel, and cheese. Jay’s version features Bolognese sauce made with Angus ground beef, Italian sausage, Burgundy wine, onions, garlic, celery, carrots, milk, basil, parsley, and San Marzano tomatoes. We fold the penne into the Bolognese and layer it into a casserole dish, then cover with more sauce and top with a luscious “spinach bechamel” (made with milk,  mozzarella, Parmesan, braised spinach, thickened with roux). The pasta is baked until bubbly. Mangia!
