Tofu Pad Thai with Rice Noodles, Peanuts, Blistered Shishito Pepper Garnish (for 1)


Jay’s Tofu Pad Thai calls for rice noodles tossed in a traditional sauce (made with shallots, garlic, ginger, gluten-free soy sauce, agave syrup, brown sugar, sesame oil, and lime juice) and plenty of roasted tofu, broccoli, a little scrambled egg, and garnished with green onions, roasted shishito peppers, and chopped peanuts. (Shishito peppers are slender, wrinkly bright green pods, slightly sweet with a delicate texture.) Serves one healthy portion.

*Thickened with corn starch slurry (corn starch and water). We use GF soy sauce instead of fish sauce.
